BOUDIN
In South Lousiana, we love our Food! And most of us love it spicy!
Boudin is a sausage usually stuffed with pork, rice and seasonings. There are other varieties such as crawfish (my favorite), alligator and seafood which consists of crawfish and shrimp. You can also buy boudin balls which rolled up boudin, dipped into a batter and deep fried. That is some good stuff!!
It is readily sold from Meat Markets and convenience stores.. Some places will snail mail to you on dry ice for a hefty price and then you can pop it in the microwave or boil it.
Everyone who sells and makes boudin will claim they have the best boudin in the area. Everyone has their own recipe so you just have to taste it and form your own opinion.
My favorite places I get boudin is Don's Specialty Meats in a near by city, Carencro. When I make my way to my hometown, New Iberia Legnon's Boucherie is the best.
You can buy it by the pound or a link. Eat it as snack or a meal.
As a child my Mom would buy some hot Lejuene's French Bread and make a sandwich with of it.

DeleteSeveral years ago, I lived in New Orleans. This post is reminding me of one of the many great things about the area. Haven't had any boudin in a long time.
